Anyone have any experience with it? I hate handlebar mounts.

I've had a few RAM mounts, none just like what you are looking at, but I've had zero problems with any of them.

Wont the bars get in the way? For my street i used a ram mount thats attached onto the bars, for my daytona i have that same stem. It does not work well as is, you need to throw everything away but the actual ram mount. Go to lowes and get a threaded rod, some washers and a wing nut. You put the rod through the stem and ram mount and use the washers and wing nuts to secure it from the bottom and top. Otherwise it keeps coming loose with the stupid rubber expansion thing.

Most likely yes it will but the mount is offset a bit. I'm going to remove the bars and hope that makes it viable.
