I've been pretty happy with Saddlemen's Teardrop with the shock cutout. By the time you add Ghost/Easy/Simply Brackets (see Ebay for the last) and strut covers, you almost don't need the shock cutout. Probably best to get it, still. They're not cheap as Saddlemen go, but I think they're less than Letherlyke (which look fantastic, by the way).
To "easily" remove them and leave the bike looking like it never had them, I think your choices are a quick release bracket with the billet strut covers, not cheap. Or throwover and just leave the support brackets in place. The brackets aren't really noticeable.
Note: I got the Teardrop bags with the "universal" brackets, which was part of the almost $300 bundle. The Saddlemen "universal" brackets do NOT fit the Meanstreak. You'll need some bike-specific ones.
