Have a 2000 zr750 that had been sitting for a while. Rebuilt the carbs. Had to replace petcock.( Which is after market, has vaccum line. Fuel nipple is smaller*) bike runs and rides. While riding if you are cruzing. No problems. But after riding in high rpms. Bike starts shutting off.
We let it sit. Starts up and bogs down a lil. After a while of sitting it returns to normal.
  1. Pilot screws need to be adjusted to new petcock ?

Does the bike start having problems while you are high RPM's or after you slow down from high RPM driving?

When you say "Bike starts shutting off" do you mean it loses engine power or the electrics stop working?

If it sits for a bit then is sort of ok it may be a carb adjustment issue. If it runs at a high RPM it's not likely it's starved of fuel or petcock related.

I'd try adjusting the pilot air screws on the carbs to about 2 1/3 turns out.
(see the red arrows below for the location. The first photo has the factory caps in place if the carbs have never been adjusted. The 2nd photo shows the slotted screw)

Loss of engine power. Will shut off from almost bogging down. Once started again it has an issue with acceleration. In any rpm untill it sits.
This morning. It will not rev at all. Carbs are in tune.
2 turns or 3 no positive results

Check for air leaks between the head as well as between the carbs and the air box/ The air box also requires the filter and cover to be in place for the proper back pressure.
I'd also check for leaks around the choke plungers and make sure they are operating as well.
