I feel stupid asking this but I have spent a lot of time searching the internet and can't seem to find anything. It is a 2001 and from what I understand ABS was an option.

A visual inspection makes me think not. It looks like any old set of motorcycle brakes. But I honestly wouldn't know what I am looking for. I haven't needed to hit the brakes hard and am still feeling out this machine so I am not sure I want to test any hard braking yet. So far no "wub wub wub"

If it is NOT ABS I am wondering if it's difficult to add it?

Probably difficult to add if it isn't already there. Look up the drawings for your bike, (ABS and non-ABS) models and compare them to your bike. There is usually some kind of sensor at the wheels and extra plumbing for the ABS system.

Otherwise find a dirt road and going about 15 MPH try and lock up the rear brake.

The 1250 has a module near the rear shock and a different line up front. Not sure if the 1200 is the same layout. Stomp on them and feel for a pulse although looking at the parts fiche would be much safer and less fun.
