I don't know anything about side mirrors other than people have removed them completely for bar end mirrors or they swapped out the mirrors from the 250.
As far as windscreens go...there aren't many options. If you like touring and don't mind touring, Puig is your best bet. Most people on here have custom painted their stock screens by spray painting the inside of the screen. Personally, I am waiting for Zero Gravity to release their double bubble windscreen for the 09-10 650r's.
Zero Gravity and Puig are the two main makers, however there are few more I've seen.
From the people I've conversed with, the double bubble is the most popular style to replace the stock screen.
I personally have a Zero Gravity Double Bubble in Fluorescent Green
It should be here at the end of the month shipped for around $115. You can order straight from them and just let them know what year you have. Also, if you don't want something in clear, smoke, or dark smoke you may end up paying more if you wait. (there is talk of charging more for windscreens in different colors other than smoke or clear)

I have the Kawasaki Touring screen, which is a few inches higher than, but similarly shaped to, the stock screen. It helps a little with the stock bars and riding upright. It helps a LOT when tucked forward. I imagine it would work great with clip-ons or lowered bars, but there might be clearance issues.
I have been thinking about getting the Laminar Lip to make it work best with upright touring.
